Vegan tzatziki
Great dip that goes with almost anything!
Servings: 2 servings
- 1/2 cucumber
- 200 g soy yoghurt
- 1 tsp salt
- 1/2 lemon (juice from it)
- pepper (to taste)
Wash the cucumber and grate finely with the peel.
Add the salt to the grated cucumber and stir. The salt will help draw the water out of the cucumber.
Leave for 10 minutes.
Then pour off the water that has been released and squeeze the cucumber a little. Some of the salt is also poured off again.
Now add the soy yoghurt and some lemon juice and mix.
Season with lemon juice, pepper and, if necessary, a little salt.
