You never had to crispy cauliflower before!

Sometimes you see videos or recipes online that make you really curious to try it yourself. For many, it was the feta pasta from the oven hype that felt like everyone had tried it. -Very tasty affair, by the way.

Today we are talking about cauliflower. To be more precise, vegan cauliflower bites from the oven. They are often presented as vegan buffalo wings and the breading or batter is seasoned accordingly with BBQ flavors. I myself (Madeleine) am not a fan of the very smoky and at the same time sweet BBQ taste, which is why the taste of our cauliflower bites from the oven is simply hearty, but not exactly like the typical BBQ spice.

This is how vegan cauliflower bites are prepared

Actually, the recipe is super easy to make and also tastes great as finger food or an appetizer. For vegan cauliflower bites, first cut the cauliflower into bite-sized pieces. Now you can preheat the oven and line a baking tray with baking paper or a baking mat.

The dough is now mixed from chickpea flour (for binding), flour, spices and plant drink. With a whisk you get a rather thin dough in which you can turn the cauliflower bites. If you don’t have chickpea flour handy, you can use soy flour. We have found that the dough can be seasoned really strongly so that the cauliflower bites have an intense taste at the end even without a dip. You may know the typical taste of chickpea flour. You can no longer taste it after baking. So don’t worry if the taste bothers you when you taste the dough. After dipping the cauliflower bites into the batter, they are rolled straight into panko breadcrumbs. This makes the vegan cauliflower bites particularly crispy. If you only have normal breadcrumbs in the house, use this or take unsweetened cornflakes and crumble them a little finer beforehand.
After breading, the cauliflower bites come on the prepared baking tray and are baked in the oven without adding fat. After about 15-20 minutes you can already enjoy them!

For us, vegan cauliflower bites and dips belong together. For this we have made a Chili Mayo from the Asian Sriracha Mayo and normal, slightly milder Mayo. So friends of the less spicy cuisine can simply dip with it.

Ingredients

  • 350 g cauliflower (about 1/2 cauliflower)
  • 1 tbsp chickpea flour
  • 2 tbsp flour
  • 1 tsp smoked paprika
  • 1/4 tsp paprika powder (hot)
  • 1/4 tsp garlic powder
  • 1/4 tsp salt (to taste)
  • 120 ml plant-based drink (unsweetened)
  • 75 g panko breadcrumbs

Instructions

  • Cut the cauliflower into florets or bites from the stalk and set aside.
  • Prepare a baking sheet with a baking mat or parchment paper and preheat the oven to 180 degrees.
  • Now stir the dough together for rolling by mixing the chickpea flour, flour and all the spices with the plant drink. The best way to do this is with a whisk.
  • Season the dough again to taste. It should be spiced a little stronger for your taste, the cauliflower and breading absorbs a lot of flavor. The chickpea flour tastes a bit raw, but that changes when you bake it.
  • Prepare the breadcrumbs in a small bowl.
  • Now turn the cauliflower bites in the batter, roll them directly in the panko breadcrumbs and place on the baking sheet.
  • Repeat until all the wings are breaded. Place the cauliflower bites on the baking sheet with a little distance from each other.
  • Now put the tray in the oven for about 15-20 minutes, until the cauliflower has the desired bite. Serve with a dip of your choice and enjoy!

Notes

You can also use regular breadcrumbs. However, we found the panko breadcrumbs much crispier and tastier in the end.
