Tomato soup

At the beginning of the year, resolutions are often good. You have energy and joy in trying out new recipes.

It is all the nicer when you find something that you like so much during this time, when you include it in your standard recipes. One of those recipes in our family was this delicious tomato soup.

It consists of delicious, preferably ripe tomatoes and fresh herbs. They give a light and fresh taste.

Here, too, you can adjust a lot to your taste. If children eat with you, you can add rice or a few small noodles to the soup, for example.

For garlic lovers we can recommend toast the bread with olive oil in the pan and add a clove or two of garlic to the pan. After roasting, you can taste the garlic aroma in the bread or even spread the garlic on the bread for the next level.

Ingredients

  • 1 kg tomatoes (as ripe as possible)
  • 1 large onion
  • 2 cloves of garlic
  • 1 tbsp olive oil
  • 600 ml vegetable broth
  • 3 sprigs of fresh thyme
  • salt
  • pepper
  • 100 ml of vegetable cream
  • some sweetener of your choice (e.g. agave syrup or date syrup)

Instructions

  • Wash the tomatoes and cut them into large cubes with a good knife.
  • Peel onion and garlic and chop finely. Then sauté in the olive oil until translucent.
  • Now add the tomatoes and deglaze with the vegetable stock.
  • Add the thyme directly, bring to the boil and simmer for about 10 minutes. A little salt and pepper can also be added.
  • Now puree the soup and strain it through a sieve. And bring it to the boil again.
  • If you like it creamy, you can add some plant-based cream or creme fraiche.
  • Season with salt and pepper. If necessary, add a little agave syrup or date syrup if the tomatoes were still a little too sour.
  • Now arrange in a bowl and serve with a little creme fraiche and a few slices of toasted bread.

Notes

A fresh ciabatta bread goes very well with it.
You can roast it in olive oil, for example.
In addition, rice or small noodles are perfect in this soup. Then simply add these after it is pureed and cook briefly until they are done.
